A new day a new cupcake to try!!

So you would think that I now work at a cupcake bakery I'd be sick and tired of cupcakes. You would be wrong. It's made me love them even more! There are so many options out there, I feel like I'll never get around to trying all of them!

This week I made White Chocolate Frosted Devil's Food Cake Cupcakes. Wow that's a mouthful! The original cupcake is just your basic Devil's Food Cake, but I'm not a huge fan of boatloads of chocolate. So I thought I'd shake it up and make the frosting whit chocolate instead. They turned out pretty tasty according to my friends. 

So I'll stop rambling and jump in!

BAM! All the stuff I needed for the recipe (which I will post at the end)! I did use almond milk and all purpose flour instead and they turned out fine!

While they cooled, I whipped up the frosting. It wasn't as thick as I would have liked, but it tasted fine.
I find taste is always more important than how it looks.

DEVIL'S FOOD CUPCAKES

for the cupcakes:
2 cups of self-rising flour (i used all purpose and it was fine)
1 tsp baking powder
1 cup packed light brown sugar
1 cup butter, softened
2 separated eggs
3 1/2 oz. semisweet chocolate, melted
1 tsp vanilla extract
1/2 cup milk (i used almond)

Preheat the oven to 350 F ( 175 C ). Place 18 paper baking cups into muffin pans. Sift the flour and baking powder and set aside. In a medium bowl, cream the sugar and butter. Add the egg yolks and beat well. Add the melted chocolate and vanilla, mixing well. Add the flour and milk alternately, beating well with each addition. Beat the egg whites in a medium bowl until soft peaks form, and gently fold them into the batter. Spoon the batter into the cups. Bake for 20 minutes. Remove pans from the oven and cool for 5 minutes. Then remove the cupcakes and cool on the rack.

for the frosting:
1/2 cup butter, softened
1 tbsp milk 
3 1/2 oz. semisweet chocolate, melted (i substituted white chocolate here)
1 tsp vanilla extract
3/4 confectioners' sugar, sifted

To make the frosting, cream the butter in a medium bowl. Beat in the milk until smooth. Stir in the chocolate and vanilla. Beat in the confectioners' sugar until thick and creamy. Spread over the cupcakes. Store unfrosted in an airtight container for up to 2 days, or freeze for up to 3 months.

Being A Grown-Up: Taxes

Doing taxes = Stupid Annoying!!

Don't get me wrong, seeing that number of money at the end was great. The process leading up to it definitely goes under the bane of my existence.

This was my first year filing them for myself. My mom, the brilliant CPA she is, always did them for me in the bast. Even though she did say she would do them this year too, I decided I should do them myself. You have to man up and learn one day.

So I went to the internet and TurboTax.

Signing up was free which was great! I did the free edition since I'm still a student.

It was annoying as all get out to gather all the paper work necessary to file taxes. W2. 1098. For me, being the anti-confrontational girl I am, I had to man up. I had a job and school I'd left to get information from. I did not want to have to talk or go down there.

All I can say is praise jesus that the job had electronic requests and I had saved all my financial paperwork from school.

Oh! I forgot to mention, I've moved twice this year so my current job didn't have my current address! Once I got that fixed I had everything I needed to start.

Phew!

As I answered the questions and filled out the information, all I could think how glad I was to not be too much of a grown up quite yet. Some of my "simplified" questions were tricky. What if I had a dependent? Or owned a house? Or stock? I shiver at the thought of filling out those questions.

I pushed through and finally got everything filed. Just waiting for that check to come now. Although I feel like I already have it spent with the list of big girl things I have to use it to buy or pay off!!

life update

Guys, I totally dropped the ball and I'm on my knees begging forgiveness! I haven't posted in weeks it feels like (cause I haven't)!! [ Insert ALL the sad emoji's here! ] I have just had a dumb about of shit going on in the past couple of weeks, but I promise this is me getting on the ball about my posts!

Currently, I am working two jobs....that's right! I got the Sprinkles job!! I am now a cupcake counter associate at the original Sprinkles bakery in Beverly Hills! It is so much fun you guys. I don't even mind getting up at 6 o'clock in the morning to go to my opening shifts! I'm slowly making my way through trying all the cupcake flavors, but I feel like it's going to take forever because there are sooooo many!

So, that is my excuse for dropping the ball: opening shifts at Sprinkles followed by closing shifts at Grauman's has been wearing my ragged. Phew.

Also, like an idiot, I have sprained my foot. So now I'm hobbling around both jobs like a crazy person. Slowly but surely it's getting better. I just need to take better care of it. I won't stop moving on it though, so that means it's gonna take even longer to heal which is not okay. Why you ask?

I have my first real dance audition coming up in 9 days at Universal Studios! I miss dancing so much, and I've always wanted to do it as more than just a class here and there. I'm so out of practice though, not having really danced in over a year, and now with my foot...oh jeez! I'm still going to go, and at least let them see my face. Who knows what will happen?! It'll be fun at least!

So that, is just my quick little update and my pledge to get back on the horse with the posting thing! I am going to even bake cupcakes later today for my 25 Weeks of Cupcakes. Of course that will be before I go see 300: Rise of an Empire tonight. Cupcakes and violence...sounds like a typical day for me actually, lol.

Viva Las Vegas!

This will be the second year that we have gone to Vegas for Courtney's big day. So I thought I'd do a this weeks post about what I packed, etc!

Originally I was going to do a packing post, and then a photo diary for the time in Vegas. However, I have to face the fact that I am a shitty vacation photographer. I'm never one to stop and take photos of the scenery. Plus, I always forget to stop and take pictures when we're all together and having a good time.

So I thought I would still do the two separate posts, but be prepared...the pictures you'll see in the next post are not mine lol.

Fun Funfetti Cupcakes

Originally I planned to do my 25 Weeks of Cupcakes every other week, but I have a lovely little trip coming up at the end of the month. So I thought I would do it now, and do a packing post next week.

My roommate Courtney's favorite is funfetti. After she suffered through my tart pink lemonade ones, I thought I would give her a treat ;D

So, I went to one of my favorite baking blogs, Sally's Baking Addiction. She has amazing recipes, and they are all from scratch. You should definitely check it out! I made her Easy Funfetti Cupcakes! <3 #25Funfetti





I really need to work on taking more pictures of the process guys!! Let me know what you guys want to see in the photos. I'm going to try to get Courtney to take pictures of me actually baking them. This was my break while the cupcakes cooked ;D.



I've got to get better at the waiting thing. I always want to put the icing on before they're cooled. 





Courtney seemed to really enjoy them. ;D


Our friend Mackenzie really liked them too, except for the one that she pushed into Courtney's face. Really wish I had caught that on camera!!

Two more quick things. One, I got the interview at Sprinkles!!!! -dances- Fingers crossed they call me back. Also after the cupcakes, we went on a little adventure to the Magic Castle in Hollywood. Big thanks to our friend who got us in! It was....magical! I want to live there forever. 

Valentine's Day Photo Diary

Valentine's Day is always a big ho-ho in everyone's life. Even if you don't want it to be a big deal, you can't escape it's grasp on the world around you.

I personally have always loved Valentine's Day. I've never had a valentine on Valentine's Day, and I don't have any complaints! It gives me an "excuse" to spoil myself with items I want like make up or clothes. I also love making all the heart shaped, pink and red treats. 

So not only will this post be about how I celebrated my Valentine's Day, but also Week 1 of my blog's cupcake series: 25 Weeks of Cupcakes!! #25Cupcakes

Fashion Rules the World

And so the fashion year begins!! I've always been a big fan of clothes and shoes. For a while, I knew that I liked fashion, but I never really understood the big hype about fashion week. 

It was a bunch of girls that were prettier than I, walking around in ridiculous looking outfits no one would wear in the real world.

Then two ideas meshed in my brain.

I have always been a big picture kind of gal. I loved going through stores and looking at their mannequins, the finished product. I would take what I saw (and liked!) and replaced those pieces with clothes I already owned. I would just purchase the pieces I was missing.



Fashion shows are giant moving mannequins performing and displaying art. It was my training in theatre that made me realize this was spectacle. The shows are meant to inspire me to use what I already have in a totally new way, and you know, buy those missing pieces from the designers. 

That's what Fashion Week means to me anyway. So bring on the weeks and weeks of fashion!!
